Best Laid Plans of Mice and Men....

This weekend was planned out to the minute. Yesterday, I was going to finish my Christmas Shopping, go grocery shopping for the Big Day, do tons of laundry, and generally get as much done as possible. Today, I was going to travel up to Stowe to work a shift at my old Wellness Center and maybe on the way home pick up any last minute items I might need. Tomorrow - Christmas Eve - was all about the pre-bake. Hauling out serving dishes, finishing up the tidying, waiting for my Mom to arrive.

Yesterday, Mother Nature told me in no uncertain terms that my plans were laughable.

We're in the middle of a 2-day weather event, which started yesterday with about 8 inches of snow, making travel of any kind unwise. Today, we're getting a mix of sleet, ice, rain, freezing rain and snow, which makes travel of any kind pretty stupid. So, no last minute shopping for me today or tomorrow. No shift in Stowe.

Still had plenty of laundry to do, though.

I can't complain too much though. I've been running around like a mad woman for the last three weeks. Even my "days off" were overloaded with to-do lists a mile long. I was exhausted. I was barely hanging on. This weather forced me to just stop. There was literally nothing else I could do.

Barring the laundry.

So, I took the day. Yes, there was stuff I could have done. But instead I chose to go outside and enjoy the fluffy white snow falling down at a crazy pace. I took a long walk. I opened myself up to the beauty and magic and blissful silence that comes with falling snow.

And the weight lifted.

December Marches On

I have a new car. It looks....exactly like the old one. Only an ugly shade of green. The other cars I test drove were a shiny dark blue. One of them looked like the interior of a space ship. This one does....not. It is pretty much exactly the same car, only a couple years younger. She doesn't have a name yet, but I'm sure that will come with time. We're still getting to know each other, after all.

Now that I've got a car I don't mind zipping around town in, I've been doing just that. Best Guy and I spent some time Christmas shopping this past weekend. Although, I'll be honest. For the first time in my life I've bought the majority of my gifts online. I prefer to buy locally whenever I can, and I enjoy the process of going to stores and seeing what jumps out and says "I'd be perfect for so-and-so!" But this year I'm really struggling to find the time.
Our Present Protection Protocol (patent pending). Toby likes to chew paper products when he gets angry
at us for leaving him alone. This was the only thing I could think of that would solve that issue.

I'm also struggling to find the time to get a head start of Christmas Day prep. I'm doing pretty good on that front though. Feeling more prepared there than I am in other areas of my life.

Gluten Free dinner rolls. My first batch came out bad, but these look awesome. Unfortunately,
the freezer made the bad ones worse, so I'm testing these now to make sure they survive the cold.

Kamish bread/Mandelbrot. Stumbled upon a recipe and Best Guy's eyes lit up when I asked
him about it. A couple of attempts later, I think I've come as close to his Bubbe's recipe as I can.

Orange Pecan Sticky Buns and Mini-Quiche for Christmas breakfast. Why yes,
I am awesome. Thanks for saying that.

I still need to pre-make the two kinds of Latkes I'm doing up this year (regular and sweet potato, both gluten free). I also need to finalize the main dish, which will be some kind of vegetarian wellington. I've found some Gluten Free puff pastry so I'm pretty stoked. My sister-in-law can't really eat gluten, hence the reason I'm trying to do as much as possible without it. Although the sticky buns have all the gluten in them. Extra, almost. It is the holidays, after all.

Finally, I'll leave you with pictures of my two Christmas trees. That's right. Two. The main one in the living room and a smaller one in the TV room. We spend so much time there, and I had the tree left over from when I was single and on my own so I figured why not?

They are both straight in real life. I apparently can't take a level photo to save my life.

Onward and upward.

Better Kate Than Never

As you've probably noticed (all six of you), over the last few months my contribution to this blog has dwindled significantly. In trying...
